A tea for special occasions, for connoisseurs. It comes from a cultivar called "big white" and is harvested from April to early May. White Peony is the poetic transliteration of its name. This tea comes from a fine harvest, carried out after the harvest of the superior grade of white tea, Yin Zhen Silvery Pekoe. The processing method is identical to that of the superior grade, while on the other hand, the taste of Pai Mu Tan is bolder. It is also known as "new style white" to contrast it with the more refined and prized white tea made solely from the tender apical buds.
